Kerala Banana Chips (Ethakka/Nenthrakka Upperi(ഏത്തക്ക/നേന്ത്രക്കാ ഉപ്പേരി)) is an authentic tasty and crispy snack which is very popular throughout Kerala. It is one of the unavoidable dishes of onam/Vishu Sadya.  Unripe Nendra bananas are used to make this chips. This chips are not easily available in other states as you wont get Nendran plantains everywhere in India.

Thalassery Banana chips is very special as it is very thin and crispy. Good quality coconut oil is used to fry the chips. Best quality raw bananas are collected from farmers to make this chips. After peeling the outer skin, they will be washed thoroughly. This pieces will be soaked in turmeric water to reduce stickiness of plantain and preserve the color. Then using a scraper the banana will be sliced and directly put into good quality boiling coconut oil. When it is half cooked, salt water will be sprinkled and wait until it become light and crispy. Crispy chips will be removed from oil and drain.
