Sharkara varatti, ശർക്കര വരട്ടി, is one of the must have dishes in any Kerala Sadya which is made with raw banana and jaggery mixed with other herbs, salt and spices to make it sweet and slightly spicytaste. Only some pieces are served on the extreme left tip of banana leaf along with a small banana chips and pappadam in Sadyas. Sharkkara varatti has the falvours of ginger, cardamom, and cumin and a coating of jaggery.

Ingrediants of Sharkara Varatti

  1. Raw banana 
  2. Sharkkara/Karuppetti
  3. Cumin powder
  4. Dry ginger powder 
  5. Cardamom powder 
  6. Turmeric powder 
  7. Salt 

Sarkara Varatti is a popular snack from the state of Kerala in India, which is made by coating banana pieces with jaggery syrup and then deep-frying them until they turn crispy. It is also known as Jaggery-coated Banana Chips or Banana Halwa.


To make Sarkara Varatti, you will need:


  • Raw bananas (also known as plantains)
  • Jaggery (unrefined cane sugar)
  • Water
  • Ghee (clarified butter) or coconut oil
  • Cardamom powder (optional)

Here's how you can make Sarkara Varatti:

  1. Peel the raw bananas and cut them into thin, long pieces. Soak them in water for 10-15 minutes to prevent discoloration.
  2. Drain the water and pat dry the banana pieces with a clean kitchen towel.
  3. In a pan, melt the jaggery with a little water to form a syrup. Cook the syrup until it reaches a one-thread consistency, which means if you take a drop of syrup between your thumb and index finger and stretch it apart, it should form a thin thread.
  4. Add the banana pieces to the jaggery syrup and mix well until the pieces are evenly coated.
  5. Heat ghee or coconut oil in a deep frying pan or kadai. Once the oil is hot, add the coated banana pieces in small batches and fry them until they turn crispy and golden brown. Remove them from the oil using a slotted spoon and place them on a paper towel to remove excess oil.
  6. Sprinkle some cardamom powder on top of the Sarkara Varatti, if desired.

Let the Sarkara Varatti cool down completely and store it in an airtight container. It will stay fresh for up to a week.
