Kudam puli (കുടംപുളി ) or Malabar Tamarind is a souring agent used in curries in Kerala, especially in seafood. Unlike its name, Kudam Puliis a small round-shaped fruit which resembles small pumpkin or lemon-shaped fruit . The presence of a hydroxycitric acid in this fruit adds the sour flavor to it.
Kudampuli is used in dry form as any other Indian spices. It undergoes a long course of action to reach in dry form.
We procure raw kudampuli fruit from local farmers. Then it is carefully washed and sliced open to remove the seeds. It is sun-dried in hygienic conditions for a couple of weeks so that water content will be gone from the fruit. After it gets dried, each piece shrinks, get wrinkled, curls and turns in black colour.
