Sharkara varatti, ശർക്കര വരട്ടി, is one of the must have dishes in any Kerala Sadya which is made with raw banana and jaggery mixed with other herbs, salt and spices to make it sweet and slightly spicytaste. Only some pieces are served on the extreme left tip of banana leaf along with a small banana chips and pappadam in Sadyas. Sharkkara varatti has the falvours of ginger, cardamom, and cumin and a coating of jaggery.
